For most specialty roasters, that's what makes it worth the extra effort. The end result is a decaf that tastes much closer to a normal cup of coffee, without any of that chemical aftertaste you'd get with solvent-processed options. The tradeoff is the equipment - the machinery needed to reach those pressure levels is pretty expensive, and the cost does get passed along to the consumer.
